Nut butters by Big Spoon Roasters

Tuesday, 18 February 2014

Big Spoon Roasters creates handcrafted nut butters from scratch in Durham, North Carolina. The wildflower honeys and nuts are sourced from local farmers who share the same philosophy.

Founder Mark Overbay was inspired by a trip to Zimbabwe, where he discovered the taste of peanuts roasting over an open fire and ground by hand, between stones. On his return home he began roasting and grinding fresh nut butter in his own kitchen.

The Chai Spice mixture is a traditional Masala Chai blend of cinnamon, caradamom, cloves, ginger, vanilla, and black pepper, which are slowly mixed with fresh roasted milled peanuts and almonds, wildflower honey and sea salt.

Cocoa Nib butter is a blend of Escazu’s 65% cacao dark chocolate from Costa Rica, cocoa nibs (crunchy pieces of roasted cocoa bean that have been separated from the husk) with fresh-roasted peanuts, local wildflower honey, and sea salt.

Mission Almond butter is made from a blend of fresh roasted and milled almonds, wildflower honey and sea salt.

The butters tie into rising consumer interest in wellness foods. Read our trend report on the Clean Eating movement here.
